Orange milkshake
Use orange squesh in flavouring syrup and vanilla ice cream. Top with sliced oranges and blend until a light fluid is obtained. Skimmed milk or fresh oranges can be used.

Preparation:-
Boil the meat at least for 45 minutes allow to cool down, pound or grind pepper and the ehuru together, then pour little warm water into a pot add potash and oil stir. Pour the meat into the pot in which you have prepared the oil and potash add the grinded pepper and ehnru add ugba and maggi and salt to taste then stir it very well.

Ing:-
Beans. Onions. Potash. Seasoning. Salt. Water. Pepper. Palm oil.
Preparation:-
Soak the beans in a bo I of watet. Wash out the shaft and pour into a pot. Cook for about 20 minutes. Use a short strong neat broom to mash it till soft Add the onions, seasoning, pepper and palm oil and allow to steam for 10 minutes. Add salt to taste.
Coconut Rice
Ing:-
Rice. Fresh tomatoes. Coconut. Sauce. Fresh shrimps. Seasoning. Onion. Meat. Salt and pepper.
Preparation:-
Boil the coconut sauce for about 10 minutes, add cooked meat shrimps, salt, seasoning, chopped tomatoes, onion and fresh pepper. Add the parboiled rice. Allow to dry a little, then add the boiled coconut sauce. Cook the rice till tender, then reduce the heat and simmer till the water is dried up.

Ing:-
Parsley, lettuce, vinaigretter, onions, tomatoes.
Preparation:-
Slice the parsly, onions, tomatoes, lettuce and mix together. Pour the vinaigrettes into the above mixture.
English cake roll
Ing:-
3 eggs, 1 cup of granulated suger, cup of water, 1 teaspoon of vanilla, ¾ cup of all purpose flour, 1 teaspoon baking powder, ¾ teaspoon of salt, ¾ cup of orange or lemon jelly.
Preparation:-
Beat egg in a small bowl on high speed until thick. Pour eggs into larger mixer bowl. Beat in granulated suger gradually. Beat in water and vanilla on low speed, add flour, baking powder and salt-gradually. Beat until better is smooth, then pour into a pan. Bake until wooden pick inserted in centre comes out clean. Immediately loosen cake from edges of pan. Invert on towel sprinkled generously with powdered suger. Carefully remove foil. Trim off the stiff edges if necessary.
While hot, carefully roll cake and towel from narrow end. Cool on wire rack at least for 30 minutes. Unroll cake cover jelly with tea whipped cream, roll up, sprinkle with powdered suger. Refrigerate and serve.

KILISHIN KWAI

CUP CAKE
Sugar 1/2 cup
Butter 1/2 cup
Eggs 3
Plain flour 1 cup
Baking powder 2 1/2 tsp baking powder
Pinch of salt
Milk 1/2 cup
Vanilla essance 1 tsp
Cooking Directions
1. Whisk butter and sugar together until light anf
fluffy.
2. In a bowl add all dry ingredients and mix.
3. Gradually add 1 tbs of flour at a time into the
butter and sugar batter, along with 1 egg at a
time so that the egg does not split.
4. Add milk and vanilla essence and whisk.
5. Place cupcakes in a cupcake/muffin try.
6. Add spoonfuls of the batter in to each cupcake
case.
7. Bake in a preheated oven at 180c for 15-20
mins.
8. Take out and cool on a wire rack.
9. Apply Butter frosting and decorate.
10. Note: in any empty cupcake moulds you can half
fill with water, this will keep the cupcakes moist.
11. Note: you can substitute 1 tbsp of cocoa powder
for 1 tbsp of plain flour and make chocolate
cupcakes instead.

***Ingredients for home-made Chicken Shawarma
***This makes about 6+ large Shawarma wraps
»2 Chicken breasts (boneless)
»2 Chicken Thighs (Chicken laps,boneless)
(You can also use boneless beef )
»6+ Shawarma bread (Pita bread or flour tortilla wraps)
»1 small sized Cabbage (cut into thin strips)
»3 medium sized Carrots (grated or cut into thin strips)
»1 large Cucumber (Cut into thin strips&circles)
»2 big Tomatoes (cut into thin strips)
»1 medium sized Onions (cut into thin strips)
»Ketchup
»Mayonnaise
»1 Tablespoon Vegetable /olive oil
(For stir frying)
***For the marinade:
»1 teaspoon thyme
»2 teaspoon curry
»1 teaspoon onion powder or 2 teaspoons minced onions
»1 teaspoon garlic powder or 2 teaspoons minced garlic
»1 large chicken stock cube (crushed into powder)
»Half a teaspoon black pepper
»Chilli pepper to taste
»Salt to taste(optional because the stock cube already has salt)
»1 Tablespoon Vegetable /olive oil
***Preparation
»Wash and Cut the vegetables into thin strip and set aside.
»Also Cut the chicken or beef into thin strips and set aside.
NOTE: Use a combination of Chicken thighs & Breasts, because the fat from the thighs adds extra flavor and compliments the taste of the chicken breast.
»Place the chicken strips into a bowl,add the marinade and mix thoroughly until well incorporated.
»Then cover and store in the fridge for 2 to 24 hours. (Depends on how much time you have)
NOTE: You can store overnight because the longer the meat marinades, the better it tastes.
»In a pan, Heat up a tablespoonful of oil.
»Add the marinated chicken/beef & Stir, fry until juicy and brown.
»Scoop unto a plate and set aside.
»Mix some mayonnaise and ketchup together.
»Place a shawarma bread on a clean flat surface and cut into two equal sizes
(that's if you are using a large pita bread).
**But if using a very flat bread or tortilla wraps, just spread the ''mayo-ketch'' on it and then fill it with the sliced vegetables on one end and Sprinkle some chili pepper(optional)
»Then fold the bread, tuck in the edge, and roll to form a shawarma wrap
NOTE: if you want to warm it up a bit, place on a heated pan for 3 minutes.

Chicken Cacciatore
Ingredients
½ cup plain flour or 60 g
1 teaspoon ground black pepper
500 g skinned chicken breast fillets, cut into 2
cm cubes
2 tablespoons vegetable oil or 30 ml
1 medium onion or 100 g, finely chopped
1 small red bell pepper or 75 g, chopped
3 cloves garlic, finely chopped
2 tablespoons tomato paste
1 teaspoon ground turmeric
3 medium tomatoes or 400 g, diced
¼ cup balsamic vinegar or 60 ml
1½ teaspoon dried oregano
1 cup water or 250 ml
2 cubes MAGGI® Chicken Bouillon or 20 g
3 tablespoons capers in brine, drained
1 packet fettuccini pasta or 450 g
8 cups water or 2 liters
1 tablespoon olive oil or 15 ml
¼ cup fresh basil leaves, chopped
Preparation
Combine Flour and Black Pepper and dust
Chicken pieces.
Heat Vegetable Oil in a large sauce pan, fry
Chicken pieces until golden brown. Remove
and rest on kitchen paper for the excess oil to
drain.
Using the same pan, sauté Onions until soft,
add Bell Peppers, Garlic, Tomato Paste and
Turmeric and cook for 2-3 minutes.
Add diced Tomatoes, Balsamic Vinegar, dried
Oregano, Water and MAGGI® Chicken Bouillon
and allow to simmer for 15 minutes.
Add Capers and return chicken to the pan and
allow to cook for 20 minutes.
Cook Pasta in boiling Water until Aldente.
Drain pasta, discard water, and return to
empty pot. Add Olive oil to pasta and toss
until all pasta is covered.
Place cooked pasta on a large platter, pour

Ingredients
I prepared mine with:
- 2 Eggs
- ½ a tomato
- A pinch of salt (or to your taste)
- Vegetable oil (for rubbing the insides of the bowls)
Note: Instead of tomatoes, you can add any other vegetable that you like: shredded carrots, green pepper, green peas etc.
Tool
- Bowls for cooking the Egg Moi Moi
You can also use aluminium foil bags or transparent nylon bags like Omalicha stated in her recipe.
Preparation
1. Set some water to boil in a big enough pot.
2. Break the eggs into a bowl and beat till combined.
3. Add salt and stir.
4. Add the tomato (diced). Stir.
5. Rub the insides of the bowls with vegetable oil so that the Egg Moi Moi comes out easily when done.
6. Pour the eggs into the bowls.
7. Place the bowls in the boiling water just like you would when cooking Nigerian Moi Moi with bowls. You can pad the pot so that the contents are cooked by indirect heat.
The level of water should be such that water does not get into the bowls.
8. Cover the pot and cook on low to medium heat for 10-12 minutes, less time if using aluminium foil bags or transparent nylon bags. If you cook them on high heat, the eggs will foam so much and become dark in colour. They are also dark when you cook them for too long even if you used low heat so keep an eye on it.
9. It’s done when the mixture solidifies.

How to make Banga Soup : Efik Banga Soup

Banga Soup : Delta State Native Banga Soup
Banga Soup is a Nigerian soup that is native to the Southern parts of Nigeria.
It is very similar to the Igbo's Ofe Akwu, but the additional spices used for preparing Banga Soup, makes it differ in taste and aroma.
Banga soup is known by several names; it is called izuwo amedi in Urhobo language and izuwo edi in Isoko language.
Here's the recipe.. Enjoy!
Banga Soup Ingredients:
*400g of canned Palm fruit pulp/ 500g Palm Fruits
*500g of cooked assorted Meat
*1/2 cup of cooked dried fish
*1/2 cup of cooked stock fish (optional)
*150 ml of Beef stock
*150g fresh fish(optional)
*1 tablespoon of ground Banga Spice (Aidan fruit+Rohojie)
*A handful of Banga spice leaves (called Obeletientien)...use scent leaves or bitter leaf as an alternative
*Oburunbebe stick (brown herbal stick used for Banga soup)
*1 small onion bulb, finely chopped
*1 tablespoonful ground crayfish
*1 stock cube
*Chili pepper or scotch bonnet( to taste)
*Salt to taste
Here's a list of the common Banga soup spices
Cooking Directions for Banga Soup
*If you are using fresh palm kernel fruit(nut),Boil for 30 minutes and check to be sure the skin is soft. Then pound lightly in a mortar to extract the oil. Make sure you don't break the nuts,while pounding. Pour in some hot water and strain the extract through a sieve.Put in a pot and boil until it thickens and the oil rises to the top.
*For the canned palm nut pulp, pour into a pot and heat until the oil begins to rise to the top.
*Add the meat stock or water, depending on the consistency you want.The less stock you add, the thicker the soup would be. Leave to boil for 10 minutes.
*Now, add the chopped onions, assorted meat and dried fish. Mix well and add the pepper, ground crayfish , ground Banga spices and stock cube. Cover and leave to cook for 8 minutes.
*Add the fresh fish and the oburunbebe stick , cover and cook until the fish is done.
*Now, take out the oburunbebe stick, rinse and store for another use.(You can leave the stick in the pot and take it out when you are ready to transfer the soup into a container)
*Add the Obeletientien leaves OR scent leaves OR bitter leaf, simmer for 1minute and your Banga soup is ready. ENJOY..
Banga Soup is usually served with Starch,but it also goes well with Pounded Yam, Amala, Wheat Meal, Tuwo Masara, Tuwo Shinkafa or Eba
