CUP CAKE
Sugar 1/2 cup
Butter 1/2 cup
Eggs 3
Plain flour 1 cup
Baking powder 2 1/2 tsp baking powder
Pinch of salt
Milk 1/2 cup
Vanilla essance 1 tsp
Cooking Directions
1. Whisk butter and sugar together until light anf
fluffy.
2. In a bowl add all dry ingredients and mix.
3. Gradually add 1 tbs of flour at a time into the
butter and sugar batter, along with 1 egg at a
time so that the egg does not split.
4. Add milk and vanilla essence and whisk.
5. Place cupcakes in a cupcake/muffin try.
6. Add spoonfuls of the batter in to each cupcake
case.
7. Bake in a preheated oven at 180c for 15-20
mins.
8. Take out and cool on a wire rack.
9. Apply Butter frosting and decorate.
10. Note: in any empty cupcake moulds you can half
fill with water, this will keep the cupcakes moist.
11. Note: you can substitute 1 tbsp of cocoa powder
for 1 tbsp of plain flour and make chocolate
cupcakes instead.
TROPICAL FRUIT SMOOTHIE

***Ingredients for home-made Chicken Shawarma
***This makes about 6+ large Shawarma wraps
»2 Chicken breasts (boneless)
»2 Chicken Thighs (Chicken laps,boneless)
(You can also use boneless beef )
»6+ Shawarma bread (Pita bread or flour tortilla wraps)
»1 small sized Cabbage (cut into thin strips)
»3 medium sized Carrots (grated or cut into thin strips)
»1 large Cucumber (Cut into thin strips&circles)
»2 big Tomatoes (cut into thin strips)
»1 medium sized Onions (cut into thin strips)
»Ketchup
»Mayonnaise
»1 Tablespoon Vegetable /olive oil
(For stir frying)
***For the marinade:
»1 teaspoon thyme
»2 teaspoon curry
»1 teaspoon onion powder or 2 teaspoons minced onions
»1 teaspoon garlic powder or 2 teaspoons minced garlic
»1 large chicken stock cube (crushed into powder)
»Half a teaspoon black pepper
»Chilli pepper to taste
»Salt to taste(optional because the stock cube already has salt)
»1 Tablespoon Vegetable /olive oil
***Preparation
»Wash and Cut the vegetables into thin strip and set aside.
»Also Cut the chicken or beef into thin strips and set aside.
NOTE: Use a combination of Chicken thighs & Breasts, because the fat from the thighs adds extra flavor and compliments the taste of the chicken breast.
»Place the chicken strips into a bowl,add the marinade and mix thoroughly until well incorporated.
»Then cover and store in the fridge for 2 to 24 hours. (Depends on how much time you have)
NOTE: You can store overnight because the longer the meat marinades, the better it tastes.
»In a pan, Heat up a tablespoonful of oil.
»Add the marinated chicken/beef & Stir, fry until juicy and brown.
»Scoop unto a plate and set aside.
»Mix some mayonnaise and ketchup together.
»Place a shawarma bread on a clean flat surface and cut into two equal sizes
(that's if you are using a large pita bread).
**But if using a very flat bread or tortilla wraps, just spread the ''mayo-ketch'' on it and then fill it with the sliced vegetables on one end and Sprinkle some chili pepper(optional)
»Then fold the bread, tuck in the edge, and roll to form a shawarma wrap
NOTE: if you want to warm it up a bit, place on a heated pan for 3 minutes.
If you have a microwave or sandwich maker, feel free to use them.

Chicken Cacciatore
Ingredients
½ cup plain flour or 60 g
1 teaspoon ground black pepper
500 g skinned chicken breast fillets, cut into 2
cm cubes
2 tablespoons vegetable oil or 30 ml
1 medium onion or 100 g, finely chopped
1 small red bell pepper or 75 g, chopped
3 cloves garlic, finely chopped
2 tablespoons tomato paste
1 teaspoon ground turmeric
3 medium tomatoes or 400 g, diced
¼ cup balsamic vinegar or 60 ml
1½ teaspoon dried oregano
1 cup water or 250 ml
2 cubes MAGGI® Chicken Bouillon or 20 g
3 tablespoons capers in brine, drained
1 packet fettuccini pasta or 450 g
8 cups water or 2 liters
1 tablespoon olive oil or 15 ml
¼ cup fresh basil leaves, chopped
Preparation
Combine Flour and Black Pepper and dust
Chicken pieces.
Heat Vegetable Oil in a large sauce pan, fry
Chicken pieces until golden brown. Remove
and rest on kitchen paper for the excess oil to
drain.
Using the same pan, sauté Onions until soft,
add Bell Peppers, Garlic, Tomato Paste and
Turmeric and cook for 2-3 minutes.
Add diced Tomatoes, Balsamic Vinegar, dried
Oregano, Water and MAGGI® Chicken Bouillon
and allow to simmer for 15 minutes.
Add Capers and return chicken to the pan and
allow to cook for 20 minutes.
Cook Pasta in boiling Water until Aldente.
Drain pasta, discard water, and return to
empty pot. Add Olive oil to pasta and toss
until all pasta is covered.
Place cooked pasta on a large platter, pour
the sauce over and garnish with chopped
Basil leaves.
